Çilek Meyvelerinde (Fragaria x ananassa) Hasat Sonrası Eksojen Melatonin Uygulamasının Antioksidatif Enzimler Üzerine Etkileri

Аннотация

Çilek (Fragaria × ananassa) dünya genelinde yetiştiriciliği yapılan karakteristik olarak non-klimakterik olan bir meyvedir ancak hasat edilen meyvenin kısa muhafaza ömrü, üzerinde durulması gereken bir zorluk olmaya devam etmektedir. Bu çalışmada, 200 µM melatonin uygulanan Albion çilek çeşidi meyvelerinin delikli plastik şale ve düşük yoğunluklu polietilen (LDPE-23 µm kalınlığında) ambalaj filmi içerisinde 0 °C ve %90-95 oransal nem içeren karanlık soğuk hava deposunda 15 gün boyunca depolanmıştır. Depolama süresince her 3 günde bir meyvelerde katalaz (CAT), süperoksit dismutaz (SOD) aktivitesi, polifenoloksidaz (PPO) aktivitesi, Askorbat peroksidaz (APX) aktivitesi ve melatonin içeriği incelenmiştir. Analizler sonucunda, 200 µM melatonin uygulamasına takiben çileklerin LDPE film içerisinde depolanması kalitenin korunmasında ve kararmaların inhibe edilmesinde daha etkili bir yöntem olabileceği dolayısıyla 15 gün boyunca başarılı bir şekilde depolanabileceği sonucuna varılmıştır. Ayrıca hem uygulamalar arası hem de depolama materyalleri arasında istatiksel olarak önemli farklıklar (p<0.05) tespit edilmiştir.
